Brain Food: Chocolate Covered Coconut Bars
Dec. 16 is National Chocolate Covered Anything Day and we’ll take any excuse to celebrate the brain-boosting benefits of chocolate!
This delicious recipe from Renewing All Things for Chocolate-Covered Coconut Bars is dairy and gluten free, has no refined sugar and requires no baking!
Ingredients
For the Coconut Bars:
1 cup shredded coconut flakes
1/4 cup raw honey or maple syrup
2 table spoons coconut oil
1/2 tsp pure vanilla
pinch of salt
For The Chocolate Drizzle:
1/4 cup coconut oil
2 table spoons honey
1/4 cup cacao powder
1/4 t. vanilla extract
pinch of salt
Directions
- Blend all of the ingredients listed for the coconut bar, squish it into a small container and freeze for 15 minutes.
- Melt coconut oil and honey over low heat then remove from heat and stir in the rest of the drizzle ingredients.
- Pour drizzle over coconut bars and return to freezer for 15 minutes.
