This month, give dad a recipe that’ll satisfy his need for singed eyebrows and the smell of charcoal while also feeding your family a delicious superfood that’s good for the brain and the body! What makes asparagus so super? Well, it’s a good source of vitamin K and antioxidants, which can help reduce risk of serious health problems like heart disease, diabetes, and cancer. Plus, it’s high in folate, which is key during pregnancy, and can also help prevent cancer. One study even showed that low-folate diets can also increase the risk of chronic diseases for the elderly! What’s not to love about asparagus? We think nothing! Grilled Asparagus with Grape Tomatoes and Pesto Recipe Courtesy of The New York Times Ingredients 1 Bunch Asparagus 2 Tablespoons + 1/4 Cup Olive Oil, divided 1 Pint Grape Tomatoes, Skewered 1 Cup Basil Leaves 1 Small Garlic Clove 1 Tablespoon Pine Nuts 1/4 Cup Grated Parmesan Cheese Preparation 1. Heat a grill with rack 4 to 6 inches from flame. 2. Brush asparagus and skewered tomatoes with 2 tablespoons olive oil. Grill asparagus crosswise, turning once or twice and brushing with olive oil until done. 3. Meanwhile, purée basil leaves, garlic, pine nuts, olive oil and Parmesan in a mini food processor. Serve asparagus and tomatoes with pesto.
